Drift away to a tropical paradise with this delicious frozen treat… and you’ll have plenty of time to spend in paradise once you get there because this recipe takes just a few minutes! You don’t need an ice cream maker to make ice cream at home – I use a food processor to make healthy soft ice cream, simply by using frozen fruit blended together with cream or coconut milk. And the best thing is that I can make any flavor I want by picking different kinds of frozen fruit.
In this Pina Colada Freeze recipe, I went with the classic pina colada combo – pineapple and coconut. Trader Joe’s has bags of frozen sweet pineapple tidbits and I combined those with their canned light coconut milk. I added 1/4 cup of sugar but you can omit this if you want to stay sugar free. Add a peeled frozen banana to make it extra creamy. I call it “soft ice cream” but there’s no dairy or cream in it. The coconut milk makes it delicious and creamy without the calories or heaviness of cream. If you do want to get that cream flavor, I suggest using half-and-half.
If you don’t have a food processor, consider getting one! I resisted for years, but now I use it regularly for recipes like this, for making hummus and other dips, for chopping or shredding veggies. I also use it to grind nuts (Trader Joe’s has Almond Meal but you can expand to all kinds of nut meals and nut butters with a food processor). I have the classic Cuisinart food processor (comes in a 14-cup size and a 7-cup size and a few other sizes in between), and as you can see from the Amazon reviews, it’s not just my favorite.
